Converting Apple Textural Parameters Obtained from Penetrometers and Their Relationships with Sensory Attributes

Textural attributes of apple impact consumers’ acceptance the fruit, and are frequently measured by researchers industry experts to evaluate fruit quality at different stages production marketing. Various instruments used conduct these textural evaluations in research settings. The application makes comparison integration results extremely difficult. main objectives this study were compare data obtained from three widely instruments, investigate their relationships with each other sensory evaluations, develop models convert among instruments. Three penetrometers included study: (1) Fruit Texture Analyzer (FTA); (2) Mohr Digi-Test-2 (MDT-2); (3) TA.XTplus (TA.XTplus). Eight varieties a range selected. Eleven judges evaluated slices (1/8 apple) variety. instrumental measurements conducted on 10 apples per instrument variety, two apple.
